the best things are always the messiest

I made waffles. But I made like 15 of them for 2 people and having only one makes you full so we have like 12 pancakes left. But the waffles were good.

And I made a mess and accidentally tipped the waffle maker over so batter got everywhere. But the waffles were good.

2 eggs
2 cups all-purpose flour
1 3/4 cups milk
1/2 cup vegetable oil
2 tablespoons white sugar
4 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon vanilla extract

1. Preheat waffle iron. Separate the egg yolks and egg whites. Beat egg whites until stiff. Sift dry ingredients together in large bowl; add egg yolks, milk, vegetable oil, vanilla, and salt. Beat together just until smooth. Fold in egg whites.

2. Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot.


I altered the original recipe IMMENSELY and am quite proud of myself. Mummy and daddy aren't home; I don't think that they will be too happy about the mess, but oh well. The waffles were good :P
